About the author: Professor Alfred Poulos is a widely-respected scientist, researcher, and public speaker. He was formerly a Chief Medical Scientist at the Adelaide Women's and Children's Hospital where he was involved in research into genetic diseases as well as the role of dietary fats and oils on our health.
